Ingredients

3C mashed potatoes
3.5C fat-free milk
.5C chopped onions
2 tsp chopped garlic
2 tbs olive oil
.5C fat-free (low sodium) chicken broth
1 tsp paprika
1 tsp salt
1 tsp black pepper
Directions
Chop potatoes and boil for 25 minutes until good and soft.
While potatoes boil, chop onions and garlic and cook in skillet with olive oil over medium heat until clear and soft.
Drain potatoes and mix onion/garlic mix in with potatoes, divide into three batches.
Add a batch of potato/onion/garlic mixture to blender with 1C of non-fat milk, blend until smooth. Add mixture back to pot. Repeat 2 more times.
Once the mixture is liqufied and back in the pot, set on low/medium heat and add .5C fat free milk and .5C fat-free, low sodium chicken broth to the mix. You can add more or less depending on how thick you like your soup.
Add paprika, salt and pepper, cook for about 10 minutes or so or until warm.
Serves 6.
You can garnish with shredded cheese, sour cream, bacon, chives or whatever you would normally put on baked potatoes.
