Introduction
Only 237 calories each!!! I love corn, bell peppers, and black beans as a side dish. Nothing needs to be added. I thought adding chicken and rice and wrapping it all up in a low carb burrito would make a great lunch item. The extras can be frozen for a quick easy meal. Only 237 calories each!!! Ingredients

Beans, black, canned, 2 cup
Green Peppers (bell peppers), 2 cup, chopped
Yellow Sweet Corn, Canned, 2 cup
La Tortilla Factory - Low Carb whole wheat 8" Tortilla, 12 serving
Brown Rice, medium grain, 2 cup
Chicken Breast, no skin, 16 ounces
Salsa, .5 cup
Chili powder, 4 tbsp
Cumin seed, 1 tbsp
Pepper, red or cayenne, .5 tsp (or to taste)
Directions
Poach or grill chicken (without anything on it) and cut into bite size pieces after it cools. Place in large bowl. Cook rice, cool, and add to chicken. Add rest of ingredients and mix well. Warm tortillas slightly and fill with mixture (a little less than 1 C of filling per wrap). Fold and wrap each in plastic wrap to hold together and place in freezer bag. Freeze for later use.
Reheating From Frozen:
Microwave and oven: Remove frozen burritos from plastic wrap. Place on a microwave-safe plate; microwave on high for 3 minutes. Transfer to baking sheet; bake at 450° until crispy, about 10 minutes. This is our favorite quick method.
Oven only: Remove frozen burritos from plastic wrap; rewrap individually in aluminum foil. Place on a baking sheet; bake at 450°, 40 minutes; remove foil, and bake to crisp, 5 to 10 minutes. (To reheat defrosted burritos, remove any wrapping, and bake for 10 minutes.)
Microwave only: Remove frozen burritos from plastic wrap. Place on a microwave-safe plate, covered with a microwave-safe bowl, and defrost at high power for 3 to 4 minutes; uncover, and microwave on high, 3 to 4 minutes longer.
