Introduction

Ingredients

2# Chuck roast, cubed and trimmed of fat
2T Olive Oil
2 oz. each cabbage, onions, celery and carrots
32 oz. Beef stock
1 can diced tomatoes
1 can tomato paste, plus 20 oz. water
6 oz. baby spinach
Onion powder, garlic powder, basil, oregano, thyme, salt and pepper to taste.
Directions
Heat oil in a heavy skillet, and sear beef cubes. Remove to slow cooker. Add vegetables and seasonings, and sautee until crisp-tender. Add to slow cooker. Mix tomato paste and water and add to slow cooker along with tomatoes and stock. Cook on low 8 hours. Add spinach, cook about 5 minutes to wilt and serve.
