Ingredients

2 1/4 cups oat bran
1 tsp baking powder
1/4 tsp each - ground allspice, cardamon, cinnamon, and nutmeg ( or slightly less each, according to preference)
1 apple, peeled and chopped
1/2 cup chopped walnuts
1/3 cup real maple syrup
1 cup skim milk
2 egg whites
Directions
Spray 12 - cup muffins pan with Pam. Preheat oven to 400 degrees.
In a large mixing bowl, combine oat bran, baking powder, spices, apple, and walnuts.
In another mixing bowl, combine maple syrup and milk.
In separate bowl, beat egg whites until stiff.
Add the liquid ingredients to the dry ones and immediately thereafter fold in egg whites. Spoon the batter into the prepared muffin cups and bake for 17 minutes at 400.
I like to eat them warm, with a pat of Benecol or Smart Balance (though this isn't included in the nutritional info).
