Ingredients

    *Fat Free Sugar Free Pistachio pudding DRY mix, 4 serving
    *Almond Breeze Almond Milk, Unsweetened Original Almond Drink, 8 oz
    *Pineapple - crushed - no sugar added, .5 cup
    *Cool Whip Free Whipped Cream,1 cup
    *Walnuts - Diamond Finely Diced Walnuts, 0.25 cup
    Pkg of miricle rice
    a couple of drops of coconut extract

Directions

Prepare rice, I rinse, dry and put in microwave for 2 min wrapped in paper towel. Then set in freezer to cool a few min.
Mix pudding, milk,pineapple,and flavoring. Fold in rice and walnuts, then add cool whip.
I put in 3 containers evenly and chill covered.
You may top with cool whip when you eat if desired.
