Number of Servings: 10

Ingredients

    2 onions, diced
    3 carrots, diced
    2 celery stalks, diced
    6 cloves garlic, crushed
    3 bay leaves
    1 tsp dried (not ground) thyme
    1/2 tsp each salt & pepper
    14oz can diced tomatoes, no salt added
    14oz can spicy tomato sauce, no salt added
    1 1/2c lentils (green or red)
    1/2c water

Directions

Fry onions, carrots, celery, garlic, bay leaves, thyme, salt & pepper in a skillet until just softened.

Scrape onion mixture into slow cooker; add diced tomatoes, tomato sauce, lentils and water; stir.

Cover & cook on low for about 5 hours.

Serving Size: makes about 10 cups
