Introduction

I needed to use up beets and greens that I received in my CSA package. I needed to use up beets and greens that I received in my CSA package.
Number of Servings: 4

Ingredients

    2 cups vegetable stock (homemade if possible)
    1 cup quinoa
    2 medium roasted beets, diced to 1/2" dice
    10 beet green leaves, washed and cut to bit-sized pieces
    Feta Cheese (optional, not included in calories)

Directions

1) Bring vegetable stock to a boil in a medium saucepan.
2) Add quinoa, cover and reduce heat to simmer; cook 10 minutes.
3) Add beets and greens on top; cover and cook another 5 minutes or until stock is absorbed.
4) Remove from heat and allow to steam for 5 minutes more.
5) Sprinkle with feta cheese for an added kick, if desired.

Note: To roast the beets, cut beet greens about 2 inches above beets. Wash the beets thoroughly and dry. Wrap beets in foil (1 large per packet or 2 small to medium). Place in your crockpot, cover and cook 4-5 hours on LOW. Remove packets from crockpot and cool untill they can be handled. Holding beet in one paper towel, use another to peel the beet (the skin should just slip off).
