Ingredients

Wild Rice, 1 cup (remove)
Onions, raw, 1 medium (2-1/2" dia) (remove)
Chili powder, 1 tsp (remove)
Garlic, 2 cloves (remove)
Zucchini, 1 cup, sliced (remove)
Cheddar or Colby Cheese, Low Fat, 2 oz (remove)
Asparagus, fresh, 1 cup (remove)
Directions
Dice onion and zucchini.
Cook wild rice (If you use other rice cooking time will be reduced). Once cooked drain, rinse and cool under cold water.
Use spray oil in no stick pan. Crush garlic into a paste. Lightly fry onion, zucchini and garlic. Once nearly cooked add chilli powder.
Cut asparagus into 1cm peices. Add asparagus to veggies and garlic cook for another minute or so. Add rice keep stiring.
Grate cheese.
Once rice if piping hot remove from heat and add grated cheese. Stir.
Serve with chopped herbs.
