Ingredients

1.5 pounds red potatoes, diced into 1" cubes
1 medium onion, cut into wedges, layers separated
2 red peppers, cut into 1-inch strips
2 tsp olive oil
1 lb italian chicken sausage
Italian seasoning or Mrs. Dash Garlic & Herb
Directions
Preheat the oven to 350 degrees.
Cut the potatoes, onions, and red peppers and place into a mixing bowl. Add olive oil and seasonings and toss to coat. Spray a baking pan or cookie sheet with cooking spray or oil. Place vegetables on dish in a single layer and roast for 15 minutes.
Meanwhile, cut the sausage links into 1" pieces. When the vegetables are done, add the chicken to the vegetables and stir. Roast for 25-35 minutes until the potatoes are done (easily pierced with a fork). Stir every 10 minutes to prevent sticking.
