These muffins are yummy any time. They turn out light and fluffy. The muffins are really low in fat but have quite a bit of sugar. This recipe can be altered easily. Ingredients

Whole Wheat Flour- 2 cups
Baking Powder- 3 tsp
Baking Soda- 1 tsp
Protein Powder- 2 scoops (68 g)
Salt- 1 tsp
Nutmeg, ground- 1.5 tsp
Cloves, ground- .25 tsp
Cinnamon, ground- 2.5 tsp
Pumpkin, canned- 1.5 cup
Applesauce, unsweetened- 2/3 cup
Milk, 1%- .2/3 cup
Egg, fresh- 1 large (beaten)
Brown Sugar- 3/4 cup packed
Craisins- OceanSpray -1/3 cup
Topping:
Flax Plus Granola-Pumpkin -1/3 cup
Brown Sugar -1 Tbsp
Directions
Spray a muffin tin with cooking spray. Pre-heat oven to 400 degrees.
In a large bowl, mix first 8 (dry) ingredients.
In a smaller bowl combine all the wet ingredients and the 3/4 cup of brown sugar. Mix well. Add the craisins and mix again.
Add the wet ingredients to the dry mix just until combined. **If you over stir the muffins will be rubbery**
Mix the granola and 1 Tbsp brown sugar in a small bowl.
Spoon the muffin batter into the muffin tin. Fill right to the top.
Sprinkle approx. 1 tsp of topping on top of the batter.
Put the muffin tin in the pre-heated oven. Bake for approx. 20mins. or until a toothpick inserted comes out clean. Time may vary for different ovens or altitudes.
Cool on a rack for a few mins.
Makes 12 large muffins.
