Ingredients

3 lg sweet potatos
2 Tbsp reduced fat sour cream
3 tsp brown sugar
Directions
1. Put sweet potatos on foil on a cookie sheet, and bake in oven at 400 degrees for about an hour or until potatos are soft.
2. Peel skin off potatos and put in a large mixing bowl.
3. Add 3 teaspoons brown sugar and 2 tablespoons reduced fat sour cream to the sweet potatos.
4. Using a mixer, mix until whipped!
Add more brown sugar if you feel you need the potatos sweeter, of course this will add to the nutritional and caloric count.
Serving Size: makes about 5 1/2 Cup servings
