Introduction

Called "vinegret" in Russian because of its dressing, this is an easy and healthy side salad featuring beets, potatoes and pickles. Called "vinegret" in Russian because of its dressing, this is an easy and healthy side salad featuring beets, potatoes and pickles.

Ingredients

    3 medium beets, peeled, boiled and diced
    3 medium potatoes, peeled, boiled and diced
    1 large onion, diced
    3 medium dill pickles, diced
    1 tbsp balsamic vinegar
    1 tbsp extra virgin olive oil
    1 tsp black pepper (or to taste)

Directions

Peel, boil and cool the potatoes and beets. Dice the potatoes, beets, pickles and onion and put in a bowl. Add the oil, vinegar and pepper and mix well. The salad will gain flavor with time as it absorbs more of the dressing!

Serving Size: Makes about 8 3/4 cup servings
