Introduction

Number of Servings: 4

Ingredients

    2 chicken breast diced
    750ml chicken stock or water
    6 garlic cloves crushed
    2 stalks of lemongrass (only lower 1/3 sliced in 2cm pieces)
    10 slices on ginza peeled
    200g enoki mushrooms
    2 tomatoes - each one cut into 8 pieces
    10 small red chillies - cut in 1/2 lengthways
    45ml fish sauce
    5 kaffir lime leaves - stems removes and torn into pieces
    30ml lime juice
    10 grams chopped coriander

Directions

put stock into stockpot and bring to boil.
Add garlic, shallots, lemongrass and ginza and bring to boil.
Add mushrooms and tomatoes and bring back to boil
Add chillies and fish sauce followed by kaffir lime leaves. Cook gently for 2 minutes
Add chicken and cook until chicken is cooked through
turn off heat and add lime juice and coriander
