Ingredients


    Roasted chicken (1 whole) shredded
    1 medium onion minced
    Cloves of garlic minced (to preference)
    Cumin
    Oregano
    Chili powder
    Roasted coriander
    15 ounce can of black beans rinsed and drained
    15.5 ounce canned pumpkin (not pie filling)
    1 small can jalapeņos or chilies
    2 cups chicken broth

Directions

remove all meat from roasted chicken. Heat onion and garlic in pot with a small amount of water. Add chicken, black beans, pumkin, and jalepenos. Mix thoroughly. Add seasoning stir again making sure the seasoning mixes throughout. Pour chicken broth over the top - stir and cover and cook on medium low heat for about an hour (until heated through). I didn't include measurements for seasonings because I there are so many personal preferences in that area.
