Introduction

This makes for a great breakfast muffin or a snack. High in fiber, low sugar and fat. This makes for a great breakfast muffin or a snack. High in fiber, low sugar and fat.

Ingredients

    2 c whole wheat flour
    3 tsp baking powder
    1 tsp salt
    1/8 tsp cloves
    1/4 tsp nutmeg
    1 c shredded pared apple
    2/3 c Splenda brown sugar
    1/2 c chopped walnuts
    1/2 c egg beaters
    1 c apple juice
    1/4 c butter, melted
    1 c bran flakes

Directions

Sift together first 5 ingredients. Stir in apple, brown sugar and nuts. In a separate bowl, combine eggs, juice and melted butter. Stir into apple mixture just until blended. Fold in bran flakes. Scoop into oiled muffin tins, filling each cup about 2/3 full. Bake at 400 degrees for 15-20 minutes.
