Introduction

Most Pasta is not a good deal for Diabetics and Pasta Salad is one of my all time favorites. Dreamfields Pasta has only 5 grams digestible carb per serving 2 ounces and has a low glycemic index so it is great for Diabetics and those on low carb diets. Ingredients

    Dreamfields Elbow pasta (dry), 4 oz
    Celery, raw, 2 cup, diced
    Kraft 2% Milk Sharp Cheddar cheese, 3 oz
    Onions, raw, .5 medium finly chopped
    Kraft Miracle Whip Light Dressing, 6 tbsp
    Cider Vinegar, 4 tbsp
    Stevia packet, 3 (You can use Splenda or real sugar if you don't like substitutes but you will need to account for calories)

Directions

Cook Dreamfields pasta drane with cold water and allow to drain all excess moisture before adding to dish.

Cut 2 cups small pieces celery
Cut cheese into very small chuncks. (about 1/3 size of an elbow pasta piece)
Finely chop onion
Mix together and add cold pasta

Mix very well. Miracle whip vinegar and sweetner (you can add a little more sweetner if you like to taste) (it will be a fairly thin mixture but not watery.)

Mix dressing with other ingredients and refergerate. This is not a soupy macaroni salad but dryer. If you want you can add more dressing after first chilling, but you will need to add calorie count - my family and friends like it as is)

I usually eat two servings and add another small side or protein,
