Introduction
These crab cakes were so good, I almost ate all 6 of them. These are an awesome alternative to fried crab cakes. Amazingly low calorie, light tasting, super crumbly but with full crab cake flavor. Ingredients

6 sticks of imitation crab meat
18 wheat saltine crackers, crushed
3 stalks green onion (scallion) finely chopped, including white parts, except the stringy roots
2 tbsp Earth Balance Buttery Spread
3 small stalks finely chopped celery
1 tsp worchestershire sauce
1/4 tsp salt
1/2 tsp garlic (fresh minced in the can)
Directions
Preheat oven to 350. In a food processor, process crab meat until it's finely chopped. Slightly melt butter in the microwave (about 10 seconds). Mix all ingredients together in a bowl with your hands. On a well greased cookie sheet (I just spray on a lot of nonstick spray), shape handfuls of the mixture and shape into round patties and flatten. Bake for 20-25 minutes, or until tops slightly brown. Crab cakes will be flaky and soft, unlike fried ones.
Makes 6 cakes, only about 120 calories each!
Serve with prepared horseradish, spicy Sriracha sauce, tartar sauce or cocktail sauce.
