Ingredients

    2 oz. soy chorizo
    1/4 c. of finely diced mushrooms
    1 large egg
    1tbl light butter
    1 tsp fat free half and half
    1 wedge laughing cow chipolte freso cheese
    7 nacho flavored nut chips

Directions

chop mushrooms into fine bits,melt butter and brown mushrooms in omelet skillet, then dump water if any out of pan, add in soy chorizo and brown, in a bowl beat egg,half and half and salt and pepper. Once chorizo is brown add in egg and scramble. remove from pan and put in microwaveable bowl. Cut up cheese wedge and lay on top of eggs, microwave for 20 sec or until cheese softens enough to stir into the eggs completely. Serve with 7 nacho cheese nut chips and fresh pico de gallo.
