Introduction
This is a cheap, easy to make soup that is easy to make in bulk. It's a basic recipe, so you can customize it however you like - soy crumbles or ground turkey instead of beef, or add low fat cheddar or sour cream for a little extra flavor.I serve this with my basic Appalachian cornbread (3 parts yellow corn meal, 1 part white flour, water to mix) for some extra fiber and Tex-Mex taste without the fat of tortilla chips.
