Introduction

This is a cheap, easy to make soup that is easy to make in bulk. It's a basic recipe, so you can customize it however you like - soy crumbles or ground turkey instead of beef, or add low fat cheddar or sour cream for a little extra flavor.

I serve this with my basic Appalachian cornbread (3 parts yellow corn meal, 1 part white flour, water to mix) for some extra fiber and Tex-Mex taste without the fat of tortilla chips.

Ingredients

    1 pound ground beef, extra lean (93%)
    1 large can vegetarian baked beans
    1 can yellow corn, no salt added
    2 small cans tomato sauce, no salt added
    2 packets taco meat seasoning, reduced sodium
    2 1/2 cups water

    Optional: hot sauce or lime juice, to taste

Directions

Brown ground beef; drain.

Add all other ingredients and stir well.

Cover and let simmer for 25-30 minutes.
