Introduction

Ingredients

2 oz Lean Ground Beef
2 tbsp Chives (Green Onions)
1/3 c Sweet Corn
1 pkg frozen Spinach (thawed and pressed dry)
1/3 c Black Beans (drained)
1/3 c Monterey Jack Ceese Shredded
2 tsp Taco Seasoning
7 6 inch Flour Tortillas
Directions
Cook the beef on medium heat until done and drain any excess grease. In the pan used to cook the beef add the green onions (chives) and cook then for about three minutes. Then return the drained beef to the pan and add the corn, black beans, spinach and taco seasoning. Stir in pan and cook together for 5 minutes.
Add the cheese.
Wrap the tortillas in a damp towel and microwave for 1 minute. This will make them moist and pliable. Remove tortillas one at a time from the hot towel (to keep them from drying out).
Place one of the six inch tortillas on a smooth clean surface and spoon about 1 to 2 tbsp of the mixture near the end closest to you. Fold the sides of the tortilla on the right and left over the mixture and then, stretching as much as possible without tearing, roll the tortilla forward. By placing the loose end under the weight of the rolled tortilla it should stay neatly and tightly rolled. Preheat oven to 450 degrees.
Do this with the remaining tortillas and mixture until all are rolled. Wrap the tortillas in plastic wrap and place in the freezer for 15 minutes.
Remove the tortillas from the freezer and plastic wrap and bake in the oven for 12 minutes. Remove, let cool, slice diagonally and serve.
