    1 pound ground chicken, lightly fried with salt and pepper
    1 medium eggplant
    2 16 oz. cans tomato sauce seasoned with italian seasoning, red pepper flakes, salt, pepper, minced garlic
    1 cup grated parmesan cheese and 1 cup grated mozarella cheese mixed together


Layer ground chicken, lightly fried in 1 tsp olice oil, salt and pepper, spread in 9X12 baking pan, sprinkle 1/2 of mixed parmesan and light cheddar cheese over chicken, add a layer of 1" sliced raw eggplant (slice so each slice has seeds in it).
Mix 2 16 oz. cans of tomato sauce with italian seasoning,
(to taste) and the garlic, onion, ered pepper, salt and black pepper.
pour over the ingredients in the 9 X 12 pan
Sprinkle the remainder of the cheese on top.
Bake 350 for 60 mins or till done when tested with a fork.
