1 tbsp Extra Virgin Olive Oil
1 to 1 1/2 tbsp Aioli
1 to 2 tsp Basil Pesto (to taste)
2 oz. Fresh Mozzarella Cheese
(Optional) Tomato Slices
Directions
Cook the chicken breast in the olive oil. No extra seasonings are necessary, as the aioli and basil pesto are very distinct.
Top the chicken with the aioli, basil pesto, mozzarella slice (heat it up lightly on the grill, if you prefer) and tomato slice(s), then serve on top of one leaf of romaine lettuce.
