Ingredients

Garlic, 4 clove
*Smart Balance Buttery Spread, 4 tbsp (1/4 cup)
Milk, 2%, .25 cup (1/4 cup)
Sour Cream, reduced fat, .125 cup (1/8 cup)
Red Potato, 450 grams (1 pound)
Directions
1. Bring a large pot of lightly salted water to a boil. Add potatoes and garlic cloves, and cook until tender but still firm, about 10 minutes. Drain, and return to stove-top over low heat.
2. Combine the butter, milk, sour cream, salt, and pepper in a microwave-safe bowl, and heat over medium heat for a minute or two, just so you're not adding cold ingredients to the hot mashed potatoes. Don't heat too high or too long, or you'll curdle the dairy!
3. Add the warmed dairy and spice mixture to the pot of potatoes on the stove-top. Mash together by hand until smooth and creamy. (It's nice to have a few small lumps, so I don't recommend beating with an electric mixer for this recipe - it tends to get 'gluey', for lack of a better word!)
4. Makes 4 'servings', each about two 1/3-cup scoops (2/3 cup each serving). Enjoy! :)
