Ingredients

    Green Beans (snap), 100 grams
    Cherry Tomatoes, 6
    Atlantic Salmon (fish), 2 fillets
    *Extra Virgin Olive Oil, 1 tbsp
    Garlic, 2 cloves
    Lemons, 1 fruit without seeds

Directions

Heat the oven to 200°C/400°F/Gas 6. Cut two pieces of foil large enough to take a fish fillet and veg (around 40cm square). Place the beans on the bottom, then the fish and the tomatoes. Drizzle olive oil all over. Add the garlic slices and season well. Crimp each piece of foil to make parcels – something like a Cornish pasty, but tightly, as you don’t want the air to escape during cooking. Place on a baking tray and cook in the oven for around 15 minutes. Gently open the bags and serve on plates with the lemon wedges. Some buttered new potatoes would make a good accompaniment.
