Introduction

This is one of my favorites. So easy and simple, but very delicious. This is one of my favorites. So easy and simple, but very delicious.
Number of Servings: 4

Ingredients

    4 cups peeled, and cubed butternut squash
    1 cup onion( red is best)
    1 Tbsp olive oil
    2 tsp garam masala
    Cilantro( 2 tbsp fresh, chopped or to taste)
    Salt and Pepper to taste

Directions

Peel and chop butternut squash. I calculated for 4 cups, but usually just prepare 2 whole squash. Chop an onion and mix together with squash in a large rectanglular baking dish. Drizzle oil over vegetables and then sprinkle with garam masala or spices of your choosing. Salt and pepper to taste. Roast in the oven at 350F for 30-45 minutes. Keep an eye and stir once in a while for even cooking and browning. Once squash is cooked to your satisfaction remove from stove and add the fresh cilantro.

Serving Size: Makes about 4 - 1 cup servings
