Introduction
This is a recipe I adapted to use Gluten free oats. I combine oats, with Quinoa flakes and buckwheat flakes. Any variety of seeds or nuts could be used, as well as coconut flakes. The seasonings can be increased for added flavor, and the nutmeg could be substituted with ginger. Any variety of dry fruit can be used. I happen to have dry cranberries on hand all the time so I just use them. My kids love this as a topping for yogurt . This is a recipe I adapted to use Gluten free oats. Ingredients

5 cups Gluten Free Rolled Oats
2 cups chopped Almonds
1 cup Pumpkin Seeds
.75 cup Sesame Seeds
1.5 cup dried Cranberries, sweetened
2 tsp ground Cinnamon
1 tsp ground Nutmeg
1.5 cup unsweetened Applesauce
.5 cup packed Brown Sugar
2 tbsp Maple Syrup
.25 cup Canola Oil
1 tbsp Vanilla Extract
.75 tsp Salt
Directions
Heat oven to 300F.
In saucepan, over medium low heat, warm applesauce, brown sugar, maple syrup, oil, and salt until well blended and smooth. Remove from heat. Stir in vanilla extract. Allow to cool slightly.
While mixture is cooling, mix oats, nuts, seeds, seasonings and dry fruit in very large bowl.
Pour wet mixture over dry ingredients slowly, mixing well to coat thoroughly and evenly.
Spread out on large baking tray, or two trays so it is a thin layer (1/2 - 1 inch thick at most). Bake for one hour, stirring every 20 minutes until golden brown and crisp.
Let cool. Enjoy!
