Introduction

Ingredients

    Butter, salted, 1 tbsp
    Olive Oil, 2 tbsp
    Onions, 1 medium diced
    Cumin seed/powder, 1 tsp
    Curry powder, 1 tsp
    Cayenne Powder, .5 tsp
    Brown Sugar, 3 tsp unpacked
    Soy Milk Plain Unsweetened, 1 cup
    Water, .5 cup
    Cherry tomatoes, 1 cup
    Spinach, fresh, 2 cups

    Extras:
    1 whole sweet potato cubed and pre-boiled
    Tofu or Tempeh
    Rice or Soba Noodles
    Shrimp or Chicken

Tips

This is meant as a sauce for stir-fry like dishes, get creative!


Directions

Warm butter, olive oil, and onion in saucepan until soft.
Add spices and mix completely, wait 2 minutes.
Add water, soymilk, cherry tomatoes.
Add spinach at the very end since it softens quickly.

Add pre-boiled potatoes, separately fried tofu or tempeh, pre-cooked noodles, or pre-cooked meat.
