Introduction

Ingredients

    Granulated Sugar, 2 cup
    Butter Flavored Crisco, 1 cup
    Egg, fresh, 3 large
    Zucchini, 2 cup, sliced
    Cinnamon, ground, 1 tbsp
    Vanilla Extract, 2 tsp
    Baking Soda, 1 tsp
    Baking Powder, .5 tsp
    *salt, table, 1 tsp
    *Flour, white, 2 cup
    Pecans, 1 cup, chopped

Directions

Soften Crisco (can also use any type of liquid oil), with mixer beat in sugar until creamy, add eggs and vanilla and mix thoroughly. In another bowl, mix all dry ingredients together except nuts. Add to liquid mixture and mix with spoon until smooth. Add nuts. Grease 2 loaf pans and instead of using flour for grease and flour, use granulated sugar instead. So you will grease and sugar the pans. Or you can use muffin tins and cupcake liners (makes 24). Bake at 350 degrees for 1 hour. Lightly cover with foil to keep top from getting too brown. Uncover for last 20 minutes of cooking. Muffins will need to cook at same temperature for 15-20 minutes.
