Quick, nutritious and delicious, this recipe is courtesy of Vita-Mix. I used vegetable broth for a vegetarian soup. Try adding a little onion and other veggies like spinach, carrots, leeks or fennel for different flavors -- it's a great way to use up those limp veggies in your crisper! Ingredients

    3 cups low-sodium vegetable broth
    6 medium stalks of celery, cut in half
    1/4 cup raw almonds
    1/8 lemon, peeled and seeded
    salt & pepper, other seasonings to taste*

    *try fresh fennel or fennel seeds, sriracha, or Mrs. Dash Garlic & Herb blend, to name a few options


Tips

The original recipe calls for blanching the almonds, but I found that to be an unnecessary step.


Directions

Cook celery in broth until softened. Put into Vita-Mix or other blender; add almonds, lemon, salt, pepper and other seasonings to taste. Blend until smooth.
