Introduction

Ingredients

    1 tsp Coconut oil
    150g (8 button) mushrooms
    40g ginger Root (Diced)
    100g Onions (Chopped)
    5 rings of Sweet Red or Orange Bell Pepper (Diced)
    1- 14.75 oz can of Salmon
    5 lg Eggs beaten together with 2-3 tbsp water
    1/2 tsp (0.5) Ground Tumeric

Tips

Serve with beans


Directions

1. Add Coconut oil to 12" skillet.
2. Add vegetables and simmer until tender.
3. Add Salmon, break into small pieces and stir with spatula.
4. After Salmon is heated add eggs.
5. Stir frequently while eggs are cooking.

Serving Size: Makes 4 one cup servings
