Ingredients

    1 can crushed tomatoes
    2 chicken breasts, cut into bite size pieces
    1/2 bag of frozen peas and carrots
    1/2 bag of frozen broccoli
    1/2 bag frozen cauliflower
    1/2 bag frozen green beans
    1/2 bag frozen spinach
    1/2-1 cup milk
    1 tsp tumeric
    1/2 tsp ground ginger
    1/2 tsp cumin
    1 tsp cayenne pepper
    sprinkle of sugar
    salt and pepper to taste
    2 cups volcano rice (or any rice you choose)

Tips

If curry is too thick add small amounts of stock/water or more milk until you reach the desired consistency.


Directions

In a sauce pan add chicken, cook 5-10 minutes or until no longer pink. Add canned tomatoes, frozen veggies and spices. Cover and allow to simmer while rice cooks. Start your rice, follow cooking directions on package. Stir chicken mixture frequently, when rice has finished cooking make sure chicken has cooked fully. Add milk, add salt and pepper to taste and serve.

    Although it sounds great, this was very bland and the frozen veggies were awful. Wont' be making this again. - 12/10/11
