Ingredients

    1 Green pepper
    1 Red pepper
    1 Yellow pepper
    2 Jalapeno peppers
    1 Onion
    1 Chicken breast
    1 5 oz. packet Mahatma Saffron Rice
    1/4 cup Fiesta Blend cheese

Directions

Boil bell peppers. Chop jalapenos and onion, then cook with chicken breast. Cook rice according to instructions. Stuff peppers with rice, or just serve rice over chopped peppers. Top with cheese.
