Introduction

These are awesome...cakey, tall cookies that are light and drizzled with glaze, not dense, overly moist patties smothered in icing. My office has been known to eat these for breakfast on more than one occasion - it's squash, after all! :) Bon appetit! Ingredients

    2.5 c. flour
    1 tsp. baking powder
    1 tsp. baking soda
    2 tsp. cinnamon
    3/4 tsp. nutmeg
    1/2 tsp. cloves
    1/2 c. salted butter
    1/2 c. brown sugar
    1/2 c. white sugar
    1 c. pumpkin puree
    1 egg
    1 tsp. vanilla

    GLAZE:
    1 c. powdered sugar
    2 tbsp milk
    1/2 tbsp. melted butter
    1/2 tsp. vanilla

Directions

1. Preheat oven to 350 degrees.
2. Combine all dry ingredients.
3. In mixer bowl, cream butter and sugar until lightend in color.
4. Add pumpkin, egg and vanilla and beat well.
5. Mix in dry ingredients. Combine and drop by the spoonful onto baking sheet.
6. Bake 15-20 minutes and let cool on wire rack.
7. Combine all glaze ingredients and add milk if necessary, until you reach a good drizzling consistency.
8. Drizzle over cookies and let glaze set.

Serving Size: Yields about 30 cookies. Serving: 2 cookies
