Ingredients

    Zucchini 6 small
    Trader Joe's Frozen Petite Peas, 454 gram
    Trader Joe's Brown Basmati Rice 1 Cup dry prepare to package instruction
    Garlic, 20 cloves pressed
    Chicken Breast, no skin, 20 ounces cubed
    Onions, raw, 1 medium (2-1/2" dia) french cut
    Yellow Sweet Corn, Frozen, 270 grams/1 can washed
    Olive Oil, 1 tbsp
    Leeks or Green Onions sliced

Tips

Serve with low sodium Teriyaki or low sugar BBQ sauce.


Directions

Saute onions in oil/butter (salt and pepper to taste), add diced chicken cook until chicken is done, add garlic cook until softened, add corn; add peas, zucchinni, and cooked rice, mix up and let simmer until all is warmed. Serves 12 8oz.
