    2 teaspoons extra virgin olive oil
    1 small onion, thinly sliced
    1 clove garlic, minced
    1 thai chili pepper, cut in half and de-seeded
    1/4 cup cider vinegar
    2 cups Russian Kale, chopped


Heat oil in pan over medium high heat. Add onions. Saute until soft. Add garlic and pepper. Cook 2 more minutes. Deglaze with cider. Add kale and cook until it's about 1/3 of its original size.
