Ingredients

    1/2 cup Mayonnaise, regular
    2 tbsp Fresh Lemon Juice
    1 tsp Fresh Lemon Zest
    1 tsp Dijon Mustard
    1 Lrg Garlic clove, minced
    2 cans (14.5 oz ea) Wild Salmon, canned, drained
    4 large egg whites, beaten
    2 cups Bread crumbs, dry, grated, seasoned
    6 tbsp Sour Cream (or plain yogurt)
    1/2 Red Onions, raw, minced
    1 tbsp Red Pepper flakes or cayenne
    1/2 tsp Cajun Dust Blackening Spice

Tips

I used sour cream in this recipe as a substitute for the plain yogurt.


Directions

Aioli - Combine the mayonnaise, lemon juice, lemon zest, mustard and garlic in a small bowl. Set aside.

Burgers - Drain water from Salmon, mash with fork in a large bowl. Add beaten egg whites, bread crumbs, sour cream, onions, pepper flakes and Cajun seasoning. Stir until all ingredients are blended. Shape into burgers.

Coat a nonstick skillet with cooking spray. Cook the burgers over medium heat for about 6 mins, turning once or until browned and crisp.

Serve with sliced tomato and toasted whole wheat buns (optional) and aioli sauce.

Serving Size: makes 10 large burgers (1 burger = 1 srvg)
