Ingredients

    Leftover Turkey cut up into soup pieces about 2 cups
    Low Sodium Chicken Broth 4 cups
    yellow onion 1 (small or medium)
    garlic diced (1 teaspoon)
    green chilis (1 4 oz can)
    Frozen Collard Greens (2 handfuls about 2 cups)
    diced tomatoes (2- 15 oz cans)
    black beans (2 cups)
    Olive Oil 1 tsp
    corn 1/4 cup

    added to taste:
    chili powder
    ground cumin
    cilantro
    salt
    pepper

Directions

Cut up all necessary ingredients. Heat olive oil and saute onions. After a minute or two add corn and garlic. Let them cook for a few seconds. Add remaining ingredients and heat to simmer. Allow to cook until the soup is hot and adjust spices to personal taste. Serve with shredded cheese.

Serving Size: makes about 10 small bowls of soup
