Introduction

Ingredients

    Butternut Squash, 2 cups
    Extra Virgin Olive Oil, 0.25 tbsp
    Garlic, 1 clove
    Fage 0% Fat Greek Yogurt, three tablespoons (or to taste)
    Black Pepper (Ground), 0.5 tsp (or to taste)
    Salt, 0.5 tsp (or to taste)

Directions

Cut the butternut squash into large pieces, remove seeds and rub with the olive oil. Place in an oven dish and let bake for about 45 minutes (depending on the size of the pieces). Spoon the flesh out of the peel, and in a bowl, mix with the pressed garlic. Mash, either with a fork, a masher, or even a blender if you prefer. Add the yoghurt, and the spices. Stir well.

Serving Size: Makes roughly 18 tablespoons. A serving is a tablespoon.
