Introduction

My new favorite vegan dessert. Seriously, this stuff is AMAZING! My new favorite vegan dessert. Seriously, this stuff is AMAZING!

Ingredients

    - 1 1/2 cups Gluten-free Baking Mix
    - 1/2 cup Oat Flour
    - 1 1/2 tsp baking powder
    - 1/2 cup vanilla coconut milk
    - 15 oz can Pumpkin
    - 1/4 cup turbinado sugar (sugar in the raw)
    - 1/2 cup dark brown sugar
    - 10 Tbsp (1/2 package) vegan Chocolate chips
    - EnerG (egg replacer) for 1 1/2 eggs, mixed with 3 Tbsp seltzer water

Tips

The original recipe was for double this. When I saw it called for 2 pans I immediately halved it, except for the pumpkin- I still used the whole can. I think that's part of what made it come out so good ;)


Directions

Mix it all together (I used a hand mixer) in the order given. Pour into greased loaf pan (I sprayed with PAM). Bake at 350 for 40 minutes, then cover with foil and bake for another 25 - 30 minutes, until a toothpick comes out clean.
