Created for our family Christmas party. Everyone is to bring appetizers, and all the good ideas were already taken. Calories do not include optional dipping sauce. Ingredients

    2 packages (6 oz total) Prosciutto - 12 slices
    2/3 pound Provolone cheese sliced very thin - 24 slices
    36 dried apricot halves
    Optional: Fat-free Honey Mustard dressing for dipping

Tips

Prosciutto is dramatically easier to handle if it is kept very cold. I recommend keeping all the meat in the refrigerator and removing it one piece at a time. You will also appreciate having a good, sharp knife.


Directions

Cut each slice of Prosciutto crosswise into 6 strips. Cut each slice of Provolone into 3 strips. Encourage the apricots to be long and skinny, then cut each in half lengthwise. Place a strip of Prosciutto on top of each strip of Provolone, allowing the meat to peek off of one end a bit. On the other end, place one piece of apricot horizontally and roll the entire bundle from one end to the other. Secure with a toothpick. Arrange around a small bowl of fat-free Honey Mustard Dressing.
