Ingredients

    Salad Ingredients:
    3 Cups Cooked Pearl Barley
    1 cup Frozen Corn
    1 cup Frozen Peas
    1 Yellow, Orange or Red Bell Pepper - chopped
    1 Med. Cucumber
    1 can unseasoned Black Beans - drained and rinsed
    1 Avocado - chopped
    1/4 cup Chopped Cilantro

    Dressing:
    1/4 cup fresh lemon juice
    1 tsp. salt
    1 tsp. black pepper
    1/4 tsp. cayenne pepper
    2 tbsp Olive oil

Directions

Mix salad ingredients. In a seperate bowl mix Dressing ingredients and lightly mix. Add to salad ingredients and toss. Let marinate for 30 - 60 minutes before serving. Better the next day.
