Introduction

Ingredients

    left over london broil cooked, and pre seasoned. cut into bite size cubes
    1 can fire roasted tomatoes
    1 can dark red kidney beans
    1 can light red kidney beans
    1 roasted bell pepper diced (roast these in batches and have them in the freezer for these kinds of meals)

    Season to taste the following:
    Salt
    pepper
    T cumin
    T garlic powder or 1-2 cloves garlic chopped
    diced onion
    1 tsp cayenne powder





Tips

I buy a variety of beans to have on hand. I purchase fresh red or orange bell peppers and roast in batches with olive oil, salt and garlic. freeze and pull them out when ever needed. no need to thaw....they chop great frozen.


Directions

pretty much everything is pre cooked so add all the ingredients to a crock pot or sauce pan and bring to a boil. reduce heat to a simmer so all the flavors blend together. roughly 45 minutes.

garnish with fresh salsa, cilantro, hot sauce, and sliced olives if desired.
