Ingredients

Pastry:
1 c. - all-purpose enriched flour
1/2 c. - "I Can't Believe It's Not Butter!" light spread
1/2 tsp. - salt
1/4 c. - confectioner's sugar
Topping:
3 tbsp. - all-purpose enriched flour
1 c. - sugar
1/2 c. - toasted coconut
1/4 c. - lime juice
1 tbsp - grated lime
3 tbsp. - confectioner's sugar
2 large eggs
Tips
Substitute lemon or orange for lime, and pair with some sliced strawberries, raspberries, or cranberries for a festive touch.
Directions
1] Preheat the oven to 350'F.
2] Line 8" square pan with parchment paper and no-stick spray.
3] Blend butter, flour, salt, and confectioner's sugar in mixing bowl until well-blended.
4] Spread evenly in pan. Bake for 20 minutes.
Topping:
1] Mix eggs, flour, sugar, coconut, lime juice and grated peel until combined.
2] Spread topping over pastry.
3] Bake 20 minutes until properly settled.
4] Allow to cool for 10 minutes before cutting.
Add a sprinkle of preserves, jam, or confectioner's sugar.
