Ingredients


    1 tablespoon coconut oil
    1/4 cup sliced onions
    2 gloves of garlic diced
    1 cup sliced mushrooms
    8 ozs.(4 pieces) Chicken Breast Tenderloins
    1/4 cup crushed tomatoes
    1/2 cup tomatoe sauce
    salt & pepper to taste
    pinch of dried italian seasoning

Tips

This is best if you let it set for 15 minutes before eating. It is delicious served over spaghetti squash and very good for you too.


Directions

Saute the onions, garlic mushrooms and chicken breasts in the coconut oil with salt and pepper. When the chicken is brown and the onions are caramelized stir in tomotoes and tomatoe sauce and italian seasong and simmer for a half hour or so.

Serving Size: 2 Chicken strips and half of the sauce
