Ingredients

    Butternut squash
    green peppers
    onions
    garlic
    stewed tomatoes
    sweet corn
    black beans
    broth/cubes

Tips

top with greek yoghurt/avocado/low fat cheese/chicken


Directions

Boil butternut squash/green peppers/garlic in broth or cubes (stock)

Using a hand held blender or masher - mash the boiled mix.
Add a can of stewed/chopped tomatoes (your liking) adding cumin/cinammon/tumeric/salt

Let it stew for 20-30 minutes then add sweetcorn/black beans
