Ingredients

1 1/2C Coconut, sweetened & shredded
3 Egg whites
1/4 tsp. Cream of Tarter (if humid add another 1/4 tsp)
1/4 tsp. Vanilla Extract
2/3 C Granulated Sugar
1/8 tsp. Salt

:) You can use 1/4 C Splenda or Truvia- calories will change and they don't gold up as much- but still yummy!
Directions
In a non-metal bowl, Beat egg whites, salt & Cream of Tarter until soft peaks form. Gradually add sugar, and vanilla and beat until peaks are stiff and glossy.
Drop by rounded teaspoon (tsp.) onto greased baking sheet, bake at 325 degrees 18 minutes until tops are slightly browned (center will be soft). TURN OFF OVEN and allow cookies to cool in oven. (or they will flatten)
