Ingredients

    *Squash, winter, acorn, raw, 4 cup, cubed (34 ounces)
    Onions, raw, 100 grams
    Garlic, 48 grams
    Celery, raw, 224 grams
    Jalapeno Peppers, 70 grams
    Red Potato, 196 grams
    360 Organic Low Sodium Chicken Broth, 4 cup
    Soy Milk, 1 Cup
    Water 32 Ounces
    Salt to taste

Tips

Top with a dollop of Sour Cream and crunchy onions.


Directions

Process Celery, Onion, Jalapenos, and Garlic. Bake Acorn Squash halved in 1/2 inch water at 350 for 30 minutes. Add Chicken Broth, water, chopped veggies and quartered potato to stockpot, salt to taste. Cook over low heat for a few hours, puree with a stick blender or allow to cool and return to food processor. Finish with 1-Cup Soy Milk.

    it tastes very good.
    Cut cooking time down to 3/4 of an hour,cut squash in half & place in microwave for 7mins. then use with the other veggies.
