Ingredients

1 1/2 c dried apricots
1 c water
1/4 c sugar
3 T lemon juice
1 1/2 c all-purpose flour
1/4 c brown sugar
1/4 c unsweetened, shredded coconut
1/4 tsp salt
9 T cold butter
1/2 c unsweetened, shredded coconut
1/3 c mini chocolate chips

Directions
Serving Size: 25 bars
Combine apricots and water in saucepan. Boil and cook 5 min until water absorbed. Stir in sugar and lemon juice, cook 2 min more and remove from heat to cool.
Preheat oven to 350.
Combine flour, brown sugar, coconut and salt. cut int butter until crumbly dough is formed. Press into 8-inch square ungreased pan, building up sides slightly. Bake 15 mins. Remove from oven, but leave oven on.
Spread apricot mixture over crust. Mix remaining coconut and chips and sprinkle on top. Bake 15 mins more, until coconut is golden brown. let cool, cut into squares, and remove carefully.
