I prepare this on the 24th, set in fridge. Christmas morning, when everyone is opening presents, pop the casserole in the oven, then let the casserole sit, to set for 15 - 30 minutes. Ingredients

1 pound breakfast sausage links, chopped
1 medium cooking onion, chopped
6 eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded Cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheese

In a large skillet, cook till sausages are browned and onions are transluscent, drain. In a bowl, combine the remaining ingredients; stir in the onion and sausage
Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.

Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.
