Ingredients

*Potato, raw, 15 medium (2" dia.) - 5 lbs
Celery, raw, 2.5 cup, diced
Onions, raw, 1.5 cup, chopped
Celery seed, 1.5 tsp
Granulated Sugar, 2.5 tsp
Salt, 3 tsp
Pepper, black, .5 tsp
Pickle Relish, .5 cup
Cider Vinegar, 5 tbsp
Kraft - Fat Free Mayo, 2 cups
Plochman's Yellow Mustard, .5 cup
Tips
You may garnish with hardboiled eggs or paprika if desired.
Directions
Peel and cut potatoes into small cubes, approx 3/4".
Boil for 10-15 minutes until desired doneness.
Finally chop onion and celery, blanch for 5 minutes in rapidly boiling water.
Rinse potatoes, celery and onion under cold water until cold to touch.
Mix all other ingredients in small bowl, and add mixture to potatoes, onion and celery, mix well, and refrigerate before serving.
Serving Size: Makes 20 - 6 oz servings
